Taste the colorful, spicy, and delicious Chinese Miao food
The Miao are an ethnic minority, and admiring the glistening silver jewelry the women wear from head to toe, you may think they are rich. But their life is quite hard and simple because of the tough living conditions in mountainous areas of southern and southwestern China. Even in their holidays and ceremonies, food showed on a table doesn't look very luxurious. But in the Miao area there is some unique food which is different from that in other areas of China.
Colorful glutinous rice
Glutinous rice is the staple food of Miao culture. A unique colorful and delicious rice is prepared for guests during holidays. There are five different colors in the rice: yellow, red, white, black, and blue. The juices of different plants give the rice beautiful colors. It is beautiful, sweet and yummy.
The single girls send their lovers the sweet, colorful glutinous rice as a gift. They may put some special things in the rice basket to imply where their relationship is going. If the man finds a bamboo hook inside, then he knows he will have to buy an umbrella for the girl as a present. A tree fork implies they are finished. A piece of a toon sprout tells they can marry soon. A glutinous rice paste with the design of baby, dragon, and phoenix will be served for the bride and groom on their wedding day.
Oil-tea
A very common Miao beverage is “oil-tea.”It is a everyday drink for some people. Salt, ginger, and oil are put together with the tea leaves and then fried in a wok. Then put into some water, and boil them together. The tea leaves are beaten into pieces with a mallet and the concoction is then boiled for a while longer. The tea is then filtered and mixed together with corn, beans, peanuts, or glutinous rice, and then some spring onions, garlic, and peppers can be added.
It's all worth it, because you can take a big sip of freshly brewed oil-tea.
A chopstick is usually provided together with oil-tea. If you don't want tea anymore, then just lay the chopstick onto your bowl. If not, tea will be given to you endlessly!
Sour soup
A special sour soup is served all year round. The soup is made of various kinds of steamed vegetables and fermented rice. To cook chicken, fish or meat, the Miao like to use this sour soup to give their dishes a unique sour flavor.
Spicy flavoring
In ancient times, it was very difficult for the Miao to get salt, so they used hot peppers to add flavor to their dishes and developed a taste for very spicy food. Nowadays fried and chopped chili peppers are the principle flavoring put into Maio cuisine.
Lots of ways can be used to prepare chili peppers. After baked or fried, they can be blended together with ginger, garlic, or wine to have distinct flavor. The flavoring can be kept for quite a long time after it is put into a jar.
Chicken and duck
The Miao like chicken and duck meat, and especially chicken or duck’s heart. The viscera are usually kept for the guests and elder people to show respect.
Wine
Wine has a long history among the Miao. Most Miao families can make wine at home.
The sticky rice and a special fruit can be used to make a sweet wine which tastes delicious and helps digestion. While visiting a Miao village, you will be entertained by the local people with a whole wine service. From the road to their village gate, there are twelve different sites used for this service. You will be considered a hero if you can finish all wine in the 12 bowls! But no need to be upset if you can't. Use your lips to softly touch the bowl, and with a polite "Dou She Mo," which means "Thank you" in the Miao!”then you will be allowed to go.
Visit the Miao villages during their holidays, and you can enjoy their exciting singing and dancing performances, along with their fascinating embroidery and silver ornaments like the unique silver earrings. Of course, plenty of wine is served too!
